  1. Tagliolini 160g
  2. White truffle 16g
  3. Unsalted Butter 60g
  4. Pasta water 50-60ml
  5. Breadcrumbs 10g
  6. Grana Padano 12g
  7. Sage 1-2g
  8. Salt flakes


  1. Cook the Pasta in a Pasta Boiler for about 10-12 minutes
  2. Pour in the butter and sage sauce in a sauté pan and melt under low heat
  3. Add the cooked pasta , Grana Padano powder, pasta water and toss gently until incorporated
  4. Add shaved white truffle and a dash of aromatic breadcrumbs.
