Ingredients
- Tagliolini 160g
- White truffle 16g
- Unsalted Butter 60g
- Pasta water 50-60ml
- Breadcrumbs 10g
- Grana Padano 12g
- Sage 1-2g
- Salt flakes
Method
- Cook the Pasta in a Pasta Boiler for about 10-12 minutes
- Pour in the butter and sage sauce in a sauté pan and melt under low heat
- Add the cooked pasta , Grana Padano powder, pasta water and toss gently until incorporated
- Add shaved white truffle and a dash of aromatic breadcrumbs.
