Truffle Burger

Ingredients

  • 2 Burger patties
  • 2 Portobello mushrooms
  • 12g Fresh truffle (what is available black or white)
  • 50g Comte cheese
  • Pickled jalapeno
  • 12g Wild rocket leaves
  • 200g Mayonnaise
  • 6g Chives, parsley and basil
  • 10ml Truffle oil
  • Lemon Juice of 1/2 a lemon
  • Pinch of salt
  • Truffle Herb Mayonnaise
  • 200g Mayonnaise
  • 6g Chives, parsley and basil
  • 10ml Truffle oil
  • Juice of half a lemon
  • Pinch of salt

Method

  1. Heat a pan or griddle and cook burger patties for 4-5 minutes each side or until cooked through to your liking
  2. Meanwhile, preheat a pan or griddle, cook and grill Portobello mushrooms for few minutes until tender
  3. Cut the bun in half and toast for few second until light golden
  4. For the last 2 minutes of cooking the burger, top each burger with comte cheese and truffle shavings
  5. Layer up the toasted bottom bun with grilled mushrooms and truffles burger patties
  6. Top with pickled jalapenos and wild rocket
  7. Spread the top with truffle herb mayo to finish and serve with potato chips
  8. For the Truffle Herb Mayonnaise: 1. Add all ingredients to the bowl and mix until well combined 2. Cover and chill until ready to serve
