Pistachio Crusted Salmon

Nutty encrusted flaky salmon.

  • 450g Salmon Fillets
  • 10g Pistachio
  • 10g Almond
  • 15g Mustard
  • 10g Extra virgin olive oil
  • 100g Lemon
  • 100g Green asparagus
  • 250g Potato
  • 10g Capers
  • 10g Dill
  • 20g Panko breadcrumbs
  • 20g Parmigiano Reggiano


  1. Combine pistachios, panko breadcrumbs, Parmesan cheese, and butter in a small bowl and stir with a fork until its evenly combined
  2. Lightly season salmon fillets with salt and pepper on both sides
  3. Heat olive oil in a large oven-safe skillet over medium heat
  4. Sear salmon fillets, flesh-side down for 2-3 minutes
  5. Turn off the heat and flip salmon pieces over so that the skin side is down
  6. Brush the top of the salmon fillets evenly with Dijon mustard.
  7. Top with pistachio mixture, while pressing the mixture down onto the salmon
  8. Bake in a preheated oven for 10-12 minutes, until the salmon flakes easily with a fork
  9. Serve with lemon wedges
