Ingredients
- King Crab meat 400g
- Shallots 20g
- Lime zest 10g
- Grapefruit juice 10ml
- Lime juice 10ml
- Salt flakes to taste
- Pepper to taste
- Cucumber 50g
- Cooking cream 50ml
- Avocado 120g
- Microherbs 30g
- Extra virgin olive oil 10ml
Method
- Cut the avocado and cucumber into small cubes, combine with lime juice and extra virgin olive oil
- In a bowl combine the crab, shallots, lime zest, cooking cream, lime juice and grapefruit juice.
- Stir to combine and season with salt and pepper.
- Display all the ingredients in the plate and extra virgin olive oil.
